The perfect snack for your festive afternoon tea.

Did you know that baking bread at home is actually quite easy? We let our creativity run wild and have created a vegan fruit bread.

 

With our YOGI TEA® Immune Support, the fruity components of the bread are enhanced by the taste of acerola cherry, echinacea and elderberry, which contribute to a healthy lifestyle, even during this festive season. That's why we created a vegan alternative to this traditional holiday recipe.

 

In our opinion, it's the perfect excuse to spend some mindful time with loved ones and fill your home with a wonderful Christmas scent.

 

Ingredients for 1 fruit loaf (25 cm loaf tin)

 

Preparation time: 35 minutes

Cooking time: 50 minutes

 

  • 350 ml apple juice
  • 3 YOGI TEA® Immune Support teabags
  • 125 g dried figs
  • 125 g sultanas
  • 150 g dried cranberries
  • 50 g hazelnuts
  • 50 g walnuts
  • 1 organic orange
  • 100 g ground almonds
  • 250 g spelt flour type 630
  • 2 tbsp baking powder
  • 3 tbsp maple syrup

 

Preparation

 

  • Bring the apple juice to the boil and leave the tea to steep in it for 5 minutes.
  • Meanwhile, coarsely chop the figs, sultanas and cranberries.
  • Toast the nuts in a hot pan without any oil for 3 minutes. Make sure they don’t burn. Then chop coarsely.
  • Grate 2 tbsp orange zest, squeeze out the orange juice. Mix the orange juice, zest and dried fruit with the flavoured apple juice and leave to soak for 20 minutes.
  • Preheat the oven to 200 °C.
  • Mix together the ground almonds, spelt flour and baking powder. Add the fruit mix and 2 tbsp maple syrup and mix well.
  • Transfer the dough to a 25 cm loaf tin lined with baking paper and bake on the middle shelf of the oven for 50- 55 minutes. Then brush with the remaining maple syrup and leave to cool completely.
