Tempeh stir fry with sesame and ginger

This delicious and healthy tempeh stir fry adds flavor and spice to your summer.

Indulge in the fruity and spicy flavors of the tempeh marinade and serve with jasmine rice, soba or udon noodles to finish the dish.

 

 

Ingredients for 2 portions

Preparation time: 20 minutes

Marinade time: 30 minutes

 

  • 2 YOGI TEA® Ginger teabags
  • 1 clove garlic
  • 15 g ginger
  • 3 tbsp light soy sauce
  • 2 tbsp dark soy sauce
  • 1 tbsp maple syrup
  • 1 tsp sesame oil
  • 250 g tempeh
  • 3 tbsp groundnut oil
  • 2 spring onions
  • 200 g sugar snap peas
  • 2 tbsp toasted sesame seeds

 

Preparation

 

  • Pour 50 ml boiling water over the teabags and leave to steep for 5 minutes before removing the teabags. Finely grate the garlic and ginger and mix with the tea, soy sauce, maple syrup and sesame oil.
  • Cut the tempeh into bite-sized pieces and leave in the marinade for at least 30 minutes.
  • Take the tempeh out of the marinade, drain well, making sure you keep all the marinade mixture. Add 2 tbsp oil to a hot pan, fry the tempeh for 5-7 minutes on all sides until golden brown, then remove from the pan and leave to one side.
  • Chop the spring onions into rings. Add the rest of the oil to the pan, fry the spring onions over a high heat for 1 minute. Add the sugar snap peas and fry for another 3-4 minutes. Return the tempeh to the pan, deglaze with the leftover marinade, add 2-3 tbsp water if necessary and cook over a low heat for a short time.
  • Top with toasted sesame seeds and serve with jasmin rice, soba or udon noodles.
