Cranberry & almond cookies with YOGI TEA® Positive Energy

What could be better than baking delicious cookies during the Christmas season and filling the room with a wonderful, festive aroma? If you can't imagine anything more beautiful, then you're in the right place! We've created a wonderfully simple recipe for you that you're guaranteed to love. These aren't the classic cookies you've probably baked many times before; instead, they're something truly special: Almond Cranberry Cookies! These little delights combine the crunchy texture of almonds with the fruity sweetness of dried cranberries. Our YOGI TEA® Positive Energy adds a wonderful flavor and heavenly scent to the mix. In Ayurveda, almonds and dried fruits are also considered Rasayana foods (rejuvenating) and are particularly ideal for stressed individuals and Vata types.

 

Ingredients

 

Preparation time: 40 minutes

Portions: 1 baking sheet (approx. 16 cookies)

 

 

  • 90 g coconut oil
  • 50 g raw cane sugar
  • 2 YOGI TEA® Positive Energy teabags
  • 100 ml water
  • 50 g ground almonds
  • 100 g rolled oats
  • 100 g wholemeal spelt flour
  • 1 tbsp baking powder
  • 50 g dried cranberries
  • 50 g whole almonds

 

 

Preparation

 

Preheat the oven to 150°C (convection oven) and line a baking tray with baking paper. Pour 100 ml boiling water over two YOGI TEA® Positive Energy  teabags and leave to infuse for ten minutes.

 

Finely chop the whole almonds. Grind the rolled oats in a food processor/blender to make a fine powder. Melt the coconut oil. Knead all the ingredients together to make a dough and divide into portions on the baking sheet. Form the dough into balls and then press flat. Bake the cookies in the oven for 15 to 20 minutes until golden brown.
