Mandarin purée with chia seeds

Ingredients for 2 servings

Preparation time: 20 minutes + 1 hour cooling time

 

  • 4 mandarins
  • 100 ml mandarin juice
  • 150 ml orange juice
  • 2 YOGI TEA® For the Senses Natural Wellbeing tea bags
  • 2 tbsp cornflour
  • 1 tbsp maple syrup
  • ½ tbsp chia seeds
  • 2 tbsp mint leaves

 

Preparation

 

  • Peel the mandarins – removing as much of the bitter white pith as possible – and separate into individual segments.
  • Bring the mandarin and orange juice to the boil. Add the tea bags and leave to steep over a low heat for 5 minutes.
  • Remove tea bags, add the mandarin segments to the juice and once more bring to the boil.
  • Add 4 tbsp of cold water to the cornflour and stir to a paste. Stir into the boiling juice together with the syrup and leave to simmer over a low heat for 2 minutes. Stir occasionally.
  • Remove from the heat and leave to cool. Stir in the chia seeds, place into bowls and set to chill for at least 1 hour before serving.
  • Serve garnished with mint leaves.
