Easy red lentil dhal

Ingredients for 2 portions

Preparation time: 25 minutes

 

  • 200 g red lentils
  • 2 YOGI TEA® Classic teabags
  • 1 ½ tsp salt
  • 1 onion
  • 1 green chilli
  • 20 g ginger
  • 2 tbsp coconut oil
  • 1 tsp cumin seeds
  • 150 g tomatoes
  • ½ tsp raw cane sugar
  • ½ bunch of coriander
  • 4 tbsp soya yoghurt

 

Preparation

 

  • Bring the lentils to the boil with the teabags and salt in 600 ml water. Leave to simmer over a low to medium heat, uncovered, for 15-20 minutes, stirring carefully every now and then.
  • Finely chop the onion, chilli and ginger. Pour the oil into a hot pan and sauté the chopped vegetables together with the cumin seeds over a medium heat for 5-7 minutes, stirring frequently, until the onions are transparent.
  • Add the tomatoes, sugar and finely chopped coriander stalks and simmer for another 5 minutes. Stir every now and then and add a little water if necessary.
  • Add the sautéd vegetables to the lentils (remove the teabags first) and stir well. Top the dhal with soya yoghurt and picked coriander leaves. Serve with chapatis, naan or basmati rice.
