Comforting and Cleansing Kitchari

Comforting, wholesome, and utterly delicious: Kitchari the traditional cleansing food of Ayurveda made with YOGI TEA® Stomach Ease!

Need a little comfort? Kitchari is a delicious savoury dish and is the traditional cleansing food of Ayurveda! Made using mung beans, basmati rice, a mix of veggies and a beautiful blend of spices this recipe will warm your heart and your body!

 

What makes this dish so special is that it is made using our very own YOGI TEA® Turmeric Chai, the tea for anyone who goes by their gut feeling. This dish is healthy and vegan and perfect for those cosy nights in! This recipe is easy to make and a great way to unwind in the kitchen on a quiet night in with loved ones or on your own as you kick back and relax. Wholesome, hearty, and hugely tasty – we hope you enjoy!

 

Ingredients for 2 portions

Preparation time: 35 minutes + soaking time: 60 Minutes

 

  • 125 g peeled mung beans
  • 125 g basmati rice
  • ½ red onion
  • 2 tbsp coconut oil
  • 1 tsp cumin
  • 1 tsp mustard seeds
  • 100 g carrots
  • ½ tsp turmeric
  • ½ tsp powdered ginger
  • 1 ½ tsp salt
  • 2 YOGI TEA® Turmeric Chai teabags
  • 30 g spinach
  • 10 g coriander

 

Preparation

 

  • Rinse the mung beans and rice well and leave to soak for an hour in clean water, before draining.
  • Finely chop the onion. Pour the oil into a hot pan, gently fry off the onion with the cumin and mustard seeds on a low to medium heat for 3-5 minutes until transparent.
  • Chop the carrots into a fine dice, add to the pan along with the turmeric and powdered ginger and fry for 2 minutes.
  • Add the drained rice and mung beans, stir, season with salt and then add 900 ml water to the pan.
  • Stir well, add the teabags, cover the pan with a lid and leave to simmer over a medium heat for 20 minutes. Stir well every now and then, being careful with the teabags. Add more water if necessary. The Kitchari should end up with a consistency similar to porridge.
  • Turn off the heat, stir in the roughly chopped spinach, leave to wilt for 2 minutes and then serve with the coriander scattered over the top.
