The Vegan Kanelbullar with Apple Recipe

The sticky cinnamon sweet, melt-in-your-mouth, twisted dough balls of pastry heaven are irresistable, but just wait until you’ve tried it with apple filling instead! Ingredients for 10 buns

Preparation time: 20 minutes + 90 minutes proving time + 30 minutes baking time

 

 

For the yeast dough

● 130 ml soya milk or other plant-based milk
● 2 x YOGI TEA® Classic tea bags
● 4 g dried yeast
● 30 g raw cane sugar
● 4 tsp rapeseed oil
● 300 g Type 630 spelt flour

 

 

For the filling

● 1 x YOGI TEA® Classic tea bag
● 60 g dates
100 g apple
● 2 tsp rapeseed oil

 

 

For the topping

● 100 g vegan cream cheese
● 50 g chopped pistachios

 

Preparation

For the dough

  • Bring the soya milk to a brief boil and place two tea bags in it to steep for 7 minutes. Then leave to cool to room temperature and remove the tea bags.
  • Dissolve the yeast and sugar in the cooled milk. Add to the flour together with the oil and knead into a smooth dough for 10 minutes using a kitchen aid or your hands.
  • Cover with a clean kitchen towel and leave to prove in a warm place for one hour until the dough has doubled in size.

For the filling

  • Pour 40 ml of boiling water over the dates and one YOGI TEA® Classic tea bag and leave to steep for 10 minutes. Then remove the tea bag.
  • Blend the dates and tea into a smooth purée. Cut the apple into small cubes and mix into the date purée together with the oil.
  • On a work surface well-dusted with flour, roll out the dough to a 1/2 cm thickness approx. 40 x 15 cm in size, then spread with the filling and tightly roll up the dough length-wise.
  • Cut into 3-4 cm pieces with a sharp knife and place approx. 2 cm apart in a greased casserole dish.
  • Cover and leave to prove in a warm place for another 30 minutes.
  • Preheat the oven to 190 °C.
  • Bake the kanelbullar for 25 to 30 minutes.
  • Leave to cool and serve lukewarm and topped with cream cheese and chopped pistachios.
