YOGI TEA® Sweet Chai Nut Cake

For cozy afternoons - a delicious nut cake!

Our YOGI TEA® Sweet Chai adds a special flavor to this cake, while the included spices provide a warming and invigorating effect. Ingredients for one loaf tin

 

Preparation time: 60 minutes + chilling time

 

 

  • 2 tbsp ground linseed + 6 tbsp water
  • 100 g walnuts
  • 100 g almonds
  • 100 g coconut oil (liquid)
  • 80 g raw cane sugar
  • 250 g flour
  • 50 g cornflour
  • 1 sachet baking powder
  • 2 YOGI TEA® Sweet Chai / Honey Chai Turmeric Vitality teabags
  • 200 ml water
  • 200 g vegan cream cheese
  • 50 g icing sugar
  • Lemon juice

 

 

Preparation:

 

1. Mix the linseed with the water in a small bowl and leave to swell for ten minutes. Chop the nuts very finely. Pour 200 ml boiling water over two YOGI TEA® Sweet Chai teabags and leave to infuse for ten minutes.

 

2. Preheat the oven to 180°C (convection oven) and grease a loaf tin or line it with baking paper. In a bowl, mix the tea with the linseed, coconut oil and sugar. Stir in the flour, baking powder and cornflour and mix to form a smooth batter. Fold the nuts into the mix and pour the batter into the loaf tin. Bake the cake in the oven for 40-45 minutes and then leave to cool completely.

 

3. Meanwhile, sift the icing sugar and mix with a dash of lemon juice and the vegan cream cheese to form a smooth icing. Keep in the fridge until needed. Smooth the icing over the cooled cake and serve.
