YOGI TEA®’s Delicious Fruity Orange-Vanilla Gingerbread (Vegan)

Christmas time – gingerbread time! Gathering in the kitchen during the pre-Christmas season and baking Christmas biscuits with many helping hands and flour-dusted, joyful faces is a tradition for many families.

Stirring, kneading, shaping, baking and decorating them… and very important: tasting them from time to time!

Gingerbread is especially well-suited for this activity: It offers many possibilities for decorating, has a great taste and we should also mention that it contains the typical Christmas spices!

Speaking of spices: Did you know that almost all of our five original YOGI TEA® ingredients are also found in gingerbread? The following spices are typically mixed together when preparing the gingerbread spice: cinnamon, star anise, ginger, mace, fennel, cardamom, coriander, anise, cloves, pimento and nutmeg.

And do you know which of these are found in our YOGI TEA® CLASSIC? We’ll tell you: soft, sweet cinnamon; sprightly inspiring ginger; sweet cardamom that is full of essential oils; cloves; and an additional ingredient that you won’t find in gingerbread: pepper as an intensive, spicy and hot addition.

List of ingredients for 10 pieces of gingerbread:

  • 170g flour
  • 1 tsp baking powder
  • 1 pinch of salt
  • 5g gingerbread spice
  • 1/2 tsp vanilla extract
  • 50g coconut oil
  • 80g agave syrup
  • 100ml freshly squeezed orange juice
  • 60g brown sugar
  • 1-2 teabags of YOGI TEA® GINGER ORANGE with Vanilla
  • Grated (organic) orange peel

For the decoration:

  • 1 cup of powdered sugar
  • 4 tsp orange juice
  • A few drops of vanilla extract


  1. To make the biscuits, mix together the flour, baking powder, salt and the gingerbread spice.
  2. Use a second bowl and thoroughly mix the liquid ingredients with the sugar in it: vanilla extract, coconut oil, agave syrup, orange juice and brown sugar.
  3. Now add this mixture to the dry ingredients and stir until you have a good dough composition. Then mix in the grated orange and the content of 1-2 teabags of YOGI TEA® GINGER ORANGE with Vanilla.
  4. The dough will now be very sticky, so please put it in the refrigerator for at least 1 hour.
  5. Preheat the oven to 180ºC.
  6. Find a clean surface and dust it with flour. Roll out the dough with a rolling pin until it has a thickness of about 1 cm. Now you can cut out or trim your choice of shapes and put them on a baking tin lined with baking paper. Make sure that there is enough distance (about 2 cm) between the individual pieces.
  7. If you notice that the dough is still too sticky, leave it in the refrigerator for a bit longer. It’s easier to work with it when it’s cold!
  8. Now bake your gingerbread for about 10 minutes. Remember: The baking time may vary depending on the oven.
  9. Once the gingerbread has cooled off, you can add the decoration to it: Put the powdered sugar into a small bowl and add 4 tsp of freshly squeezed orange juice and some drops of vanilla extract. Thoroughly mix the ingredients until you have a sticky paste.
  10. Now fill the mixture into a piping bag and decorate your gingerbread as you like.
