Spring Bowl Heartwarming Teabag

Preparation time: 30 Minutes
Ingredients for 4 portions

• 400 g buckwheat
• 400 g French beans
• 500 g Broccoli
• 1 fresh cucumber
• 1 tbsp Sesame
• 1 tbsp sunflower kernels
• ½ red chili
• 400 g cooked black beans
• 1 tsp salt
• 300 g baby spinach
• ¼ bunch basil

For the dressing
• 2 bags YOGI TEA® Heartwarming
• 2 tbsp Tahini (alternative: almond butter)
• 2 tbsp apple vinegar
• ¼ tsp orange zest
• 2 tbsp orange juice
• 1 tbsp salt
• 1 tbsp black pepper

Bring the buckwheat to a boil in twice the amount of water and allow to simmer on low heat for 10 minutes, then drain. Steam the beans and the broccoli, cut into florets, for 15 minutes or less according to preference. Grate the cucumber lengthways into strips and roll up. Toast the sesame and sunflower kernels in a hot pan for 5 minutes without oil, turning occasionally.
Cut the chili into fine rings. Season the beans with salt and set aside.
For the dressing, allow the YOGI TEA® Lebensfreude to steep in 100ml boiling water for 5 minutes. Then remove the teabag and combine with the remaining ingredients for the dressing. Round off with salt and pepper.
Divide the buckwheat, vegetables, cucumber rolls, beans and baby spinach into bowls and top with the dressing, toasted sesame and sunflower kernels, chili and torn basil leaves.
