Autumn is here all around us. You can feel it, see it and also smell it! We have the perfect recipe to help you wind down as the winter draws in. This recipe combines a variety of colourful root vegetables but the real star is our Turmeric Chai tea which is used to infuse the rice and to prepare the dressing! It uses simple ingredients with seasonal veggies to bring out their natural, earthy flavours – a great way to impress your friends and family. It’s heartwarming, delicious and healthy – one to try on the cosy autumn nights in!

Turmeric Chai Autumn Vegetables Bowl

Preparation time: 50 Minutes
Ingredients for 4 bowls

• 250 g Basmati & wild rice mix (if unavailable pre-mixed, add 10-15% of wild rice to basmati)
• 500 g pumpkin
• 350 g beetroot
• 350 g sweetcorn
• 6 tbsp olive oil
• 1 tsp salt
• 1 bag YOGI TEA® Turmeric Chai
• 400 g Tempeh (alternative: Tofu)

For the Dressing
• 1 bag YOGI TEA® Turmeric Chai
• 125 g sunflower kernels
• 1 tsp salt
• Juice of 1 lemon
• 3 tsp white wine vinegar

Also
• 2 heads of chicory
• 100 g mixed sprouts

Boil the Basmati & wild rice in water (1.5 times the volume of the rice) along with the teabag, close the lid and allow to simmer at a low heat for 15 minutes.
Pre-heat the oven to 180 °C.
Cut the pumpkin, beetroot and sweetcorn into bit-size pieces. Season with 4 tbsp olive oil and salt. Distribute on a baking sheet lined with baking paper and roast in the oven for 40 minutes. Turn after 20 minutes.
Cut the tempeh into bit-size pieces, add the remaining olive oil to a hot pan and fry the tempeh pieces for 8 minutes on a medium heat. Turn occasionally.
For the dressing, prepare a YOGI TEA® Turmeric Chai with 200 ml boiling water and allow to steep for 5 minutes. Then remove the teabag and blend with the remaining ingredients to a fine texture.
Divide the chicory into individual leaves, set out in bowls with the rice, vegetables and tempeh and top with sprouts and the dressing.
