To good friendship – with the Matcha “No Cheese” Cake

But what about in real life, away from the internet? Not those metered minutes that we spend on a quick lunch, but the profound and intense moments in time that really make our lives; How strong are our interpersonal relationships from that point of view?

Making that shared time even sweeter, in collaboration with IlkaEliseB, we have developed a recipe for a vegan Matcha “No Cheese” Cake.

Matcha “NoCheese” cake


Ingredients: (for a 26 cm springform pan)

For the base:

For the filling:

  • 1 kg vanilla-flavored soy yoghurt
  • 2 sachets custard powder (check that is it vegan!)
  • 1/2 teacup (125 ml) melted margarine (vegetable)
  • 1/4 teacup (65 ml) agave syrup
  • 2 tablespoons Matcha powder

Decoration:

  • Crushed chocolate cream-filled sandwich biscuits
  • Fresh raspberries

Instructions:

  • Preheat oven to 180ºC.
  • Prepare the base: crush the biscuits and combine with the melted margarine until a dough is formed. Add the content of the teabags and combine again. Now press the dough into the tin and bake for 5 – 8 minutes. Allow to cool while you prepare the filling.
  • For the filling: In a large mixing bowl, combine all the ingredients for the cheesecake filling and cream together with a blender.
  • Pour the mixture into the cooled base and bake until it is golden brown at the edges. Do not worry if the cake is still a bit soft, it will solidify once the cake has completely cooled! Leave covered in the refrigerator for at least 3 hours.
  • Decorate the cake before serving with a few crumbed biscuits and fresh raspberries.
